Flourless Chocolate Cake
Flourless Chocolate Cake (gluten free)
Next time your having a celebration, or just in the mood for some chocolate cake, this recipe will be sure to satisfy all your chocolate cake needs. It’s very easy to make. You don’t even need a mixing bowl! Just a powerful blender or food processor. Also, it’s a higher protein cake without any flour, so you get a little nutrient boost along with some chocolatey goodness.

Ingredients
Cake:
1 15 oz. can black beans (drained and rinsed)
5 large eggs (room temperature)
6 tbsp. softened butter
3/4 cup honey or maple syrup
6 tbsp. cocoa powder
1 tsp. baking powder
1/2 tsp. baking soda
1 tbsp vanilla
1 tbsp water
1/2 tsp. salt
Chocolate Butter Cream Frosting
1 cup soften butter
3 tbsp. cocoa powder
1/2 cup powdered coconut sugar or powdered sweetener of choice
1 tsp. vanilla
Instructions
Preheat oven to 350 degrees.
Grease 8 inch cake pan.
In a high speed blender or food processor combine eggs, beans, vanilla, and honey (or maple syrup). Blend until smooth and liquid.
Add remaining ingredients and blend on high until well combined. (Cake batter should be more on the thinner side)
Pour into cake pan and bake for 35-40 minutes or until toothpick comes out clean. Do not over bake.
For the frosting beat butter on high with a mixer for about 3 minutes. Butter should be a lighter, fluffier texture.
Add the cocoa powder, coconut sugar, and vanilla. Beat again on high until well combined.
Frost cake after it is cooled, and store in the refrigerator.
