Caribbean Chicken
Caribbean Chicken (dairy free, gluten free, paleo)
Summer is almost over, but that doesn’t mean that you can’t keep enjoying summertime meals! I know this recipe is called caribbean chicken, but I have never been to the caribbean just Hawaii. Which, I must say is one of the most scenic places I have ever been to. I am sure the caribbean is too, and lets face it I would probably love anywhere that has warm sandy beaches and turquoise water. This recipe has all the island vibes, and I like that not only does it taste like I ordered this at some beach side restaurant somewhere tropical, but it’s so easy to make.

Ingredients
4 chicken breasts
3 tsp. cumin
2 tsp. coconut sugar
3 tsp. paprika
1/4 tsp. cayenne pepper
1/2 tsp. salt
2 tbsp. coconut flakes unsweetened (optional)
2 cups cooked rice, quinoa, or riced cauliflower
1/4 cup chopped cilantro
1 avocado
1-2 tbsp. honey
Instructions
1.Toast coconut flakes until golden brown. Bake at 350 degrees.
2. Add salt, coconut sugar, cumin, paprika, and cayenne pepper in small bowl and mix. Rub chicken with seasoning mix on both sides and grill chicken until cooked.
3.Cook rice, cauliflower, or quinoa with coconut oil and salt.
4. Mash avocado and add 1/4 tsp. salt, and tsp. lemon juice, set aside.
5.Assemble with chicken, rice, and avocado, top with coconut flakes, cilantro, and drizzle with honey.
