Hummus

Hummus (nut free, gluten free, vegan, paleo)

Hummus has been my go to snack for awhile. It’s just easy and convenient. You can take it on road trips, to the lake, beach, or for a quick snack at home. I also like that it can keep in the fridge for a week. I used to buy store bought hummus until I became allergic to garlic, then I had to start making it myself, which by doing so I realized making it from scratch tastes so much better. It probably only takes 5 minutes to make it too, which is nice. Another thing I like about hummus is it goes with a variety of things including veggies, chips, and you can even put it in a wrap. Not only does this make a good snack but it’s also a good party food that you can feel good about eating.

Ingredients

  • 1 can garbanzo beans ( drain most of the water but leave a little less than 1/4 of the water) For paleo version 1 cup of roasted butternut squash.

  • juice of 1 medium-large lemon

  • 1/4 cup tahini

  • 1/4 cup olive oil

  • 1/2 tsp. salt

  • 1/3 tsp. paprika

  • 1/3 tsp. cumin

  • (Optional) 1 roasted bell pepper, and/or garlic clove

Instructions

  1. Blend all ingredients in food processor or blender.

  2. Store in refrigerator for up to a week.
