Crispy Chicken Salad (dairy free, gluten free, paleo)
This recipe reminds of those crispy chicken salads I would get at Applebees or Red Robin, but minus the gluten and sugar. So if you also happen to like those, but want a healthier version, than look no further. With this recipe you can’t tell that there is no gluten in the chicken because it’s crispy, and holds together like normal fried chicken. Because let’s face it you can’t have a crispy chicken salad without fried chicken. My honey mustard dressing goes perfectly with this salad, it is sweet, salty, and creamy, and only 3 ingredients. So next time you are craving that restaurant salad, but don’t want the guilt of eating it or your in my boat and can’t eat it, then definitely give this recipe a go.

Ingredients
5 thin cut pieces of chicken breast
1/2 cup cassava flour (otto’s natural’s https://www.ottosnaturals.com)
1 1/2 tsp. salt
1/2 cup milk of choice
3/4 tsp. black pepper
1 1/2 tsp. paprika
1 cup avocado oil
1/4 cup vegan or regular mayonnaise
1 tbsp. dijon or yellow mustard (dijon has a more vinegar flavor)
1 tbsp. honey
2-3 cups mixed green lettuce
1/2 cup chopped cucumber
1/2 cup chopped carrots
(optional) bacon, hard boiled eggs, tomatoes, cheese etc. (if you can have it)
Instructions
1. To make dressing mix mayo, mustard, and honey in a bowl and set aside
2. In a medium size bowl add cassava flour, salt, pepper, and paprika and mix. In a separate bowl add milk.
3.Heat avocado oil in frying pan on high/medium heat.
4. Dunk chicken in milk, then into the breading mixture, and add to frying pan. Repeat with all the pieces of chicken. (Make sure frying pan is hot before you add the chicken)
5. Cook chicken until crispy.
6. Once cooked place on paper towel to remove excess oil. Chop chicken into strips.
7. Assemble salad, and drizzle dressing.
