Chewy Cashew Chocolate Chip Cookies (paleo, gluten free, vegan, dairy free, egg free)
These cookies are a little crispy on the outside and chewy on the inside. Since they can be at room temperature they can easily be taken on trips, in lunches, or even as a snack on the go. They only have a few ingredients, so they are easy to make. Also if you don’t necessarily want chocolate chip cookies, you can turn them into what ever you want. You can add oatmeal, raisins, nuts, or shredded coconut.

Ingredients
1 banana mashed or 1 egg
1 cup cashew butter https://artisanaorganics.com/ (you have to use this brand for this recipe) you could also try raw almond butter, but make sure there is no added oil
1 cup coconut sugar
1 tsp. vanilla extract
1 tsp. baking soda
(Optional) 1/3 cup chocolate chips, nuts, raisins
Instructions
Preheat oven to 350 degrees.
Combine ingredients in large bowl. Can use hand mixer or whisk.
On a cookie sheet, use medium size scoop to put dough on cookie sheet. These cookies flatten themselves like normal cookies so don’t flatten. Make sure to leave enough room for cookies to flatten when baking.
Bake for about 10 minutes. They should be golden brown and puffed up coming out of the oven. As they cool they will look more flat and crackled.
Can store in freezer, room temperature, or in refrigerator.
